11. Baked Tofu with Vegetables

Ingredients:

  • 1 block firm tofu, pressed and cubed
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 small onion, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • Salt to taste
  • Fresh parsley or basil for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, toss the tofu cubes with garlic powder, paprika, black pepper, and salt.
  3. Spread the tofu on a baking sheet lined with parchment paper.
  4. Add the chopped bell pepper, zucchini, onion, and cherry tomatoes around the tofu cubes.
  5. Bake for 25–30 minutes, flipping halfway through, until the tofu is golden and the vegetables are tender.
  6. Garnish with fresh parsley or basil and serve warm with quinoa or a salad.
