13. Zucchini Noodles with Tomato Basil Sauce

Ingredients:

  • 2 medium zucchinis, spiralized into noodles
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • A squeeze of lemon juice

Instructions:

  1. In a pan, sauté the minced garlic (without oil) until fragrant. You can add a small amount of water if needed.
  2. Add the chopped tomatoes, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
  3. Add fresh basil and lemon juice to the sauce, and stir to combine.
  4. In another pan, lightly heat the zucchini noodles for 2-3 minutes until just tender.
  5. Serve the zucchini noodles with the tomato basil sauce on top.
