Ingredients:
- 2 medium zucchinis, spiralized into noodles
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
- A squeeze of lemon juice
Instructions:
- In a pan, sauté the minced garlic (without oil) until fragrant. You can add a small amount of water if needed.
- Add the chopped tomatoes, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
- Add fresh basil and lemon juice to the sauce, and stir to combine.
- In another pan, lightly heat the zucchini noodles for 2-3 minutes until just tender.
- Serve the zucchini noodles with the tomato basil sauce on top.
