Ingredients:
- 1/2 cup cooked lentils
- 1 cup spinach, chopped
- 1/2 cucumber, diced
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
- In a bowl, combine cooked lentils, spinach, and cucumber.
- Drizzle with lemon juice, and season with salt and pepper.
- Toss and serve chilled.
