23. Zucchini and Tomato Fritters (Oil-free)

  • Ingredients:

    • 2 medium zucchinis, grated
    • 1 tomato, grated
    • 1/4 cup chickpea flour
    • 1/2 tsp cumin powder
    • Salt to taste
    • Fresh coriander for garnish
  • Instructions:

    1. Squeeze out excess water from the grated zucchini and tomato.
    2. In a mixing bowl, combine grated zucchini, tomato, chickpea flour, cumin powder, and salt.
    3. Form the mixture into small patties.
    4. Cook the patties on a non-stick pan over low heat for 3–4 minutes per side until golden brown.
    5. Garnish with fresh coriander and serve warm.
