21. Aloo Gobi (Potato and Cauliflower Curry)

  • Ingredients:

    • 2 medium potatoes, cubed
    • 1 medium cauliflower, chopped into florets
    • 1 tomato, chopped
    • 1/2 tsp cumin seeds
    • 1/2 tsp coriander powder
    • 1/4 tsp turmeric powder
    • Salt to taste
    • Fresh coriander for garnish
  • Instructions:

    1. In a pan, dry roast cumin seeds until fragrant.
    2. Add the potatoes and cauliflower, and cook for 5–7 minutes.
    3. Add tomatoes, coriander powder, turmeric powder, and salt. Stir well.
    4. Cover and cook until the vegetables are tender.
    5. Garnish with fresh coriander and serve with roti or rice.
