4. Oats Khichdi (Savoury Oats and Moong Dal)

Ingredients:

  • 1/2 cup oats
  • 1/4 cup moong dal (yellow split lentils)
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp ginger, grated
  • 1/2 carrot, chopped
  • Salt to taste
  • Water as required

Instructions:

  1. Dry roast the oats and moong dal separately until they give off a mild fragrance (about 2-3 minutes).
  2. In a pan, dry roast cumin seeds, mustard seeds, and grated ginger.
  3. Add chopped carrots to the pan and sauté for 1-2 minutes.
  4. Add the roasted oats and moong dal to the pan, then add water (about 2.5–3 cups).
  5. Add turmeric powder and salt, and cook for 10-15 minutes until everything softens and the water is absorbed.
  6. Stir gently and serve warm.
