18. Baingan Bharta (Smoky Eggplant Mash)

Ingredients:

  • 2 medium eggplants (baingan)
  • 1 small onion, chopped
  • 1 tomato, chopped
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/4 tsp coriander powder
  • Salt to taste
  • Fresh coriander for garnish

Instructions:

  1. Roast the eggplants directly on the stove or in the oven until the skin is charred (about 15–20 minutes). Peel off the skin and mash the flesh.
  2. In a non-stick pan, dry roast cumin seeds until fragrant, then add the chopped onions.
  3. Cook the onions until golden, then add the tomatoes and spices (turmeric, coriander powder, and salt).
  4. Add the mashed eggplant and cook for 5–7 minutes.
  5. Garnish with fresh coriander and serve warm with roti or rice.
